Summer Farmers’ Markets – Hours and Update 1

For those of you wondering, “Hey, the Summer farmers’ markets have started – where’s Throwback?”- here’s an update.  We did get accepted at the Portsmouth market and some days at the Exeter and Dover markets.  However, we need to wait for the NH liquor board to approve our attendance before we can attend.  If that goes well, then you can expect to see us at the markets listed below.

At the markets we will bring 22-oz bottles and filled growlettes.  You can either buy a new growlette at the market, or bring your existing growlette(s) in for exchange!  Each week on Facebook we will post what beers we are bring to the markets.  (note- you don’t have to be a member of Facebook to view this page.)

Please check back in the next few weeks, as we might add more markets!

Throwback Brewery Chaga from New Hampshire

Shroooomssss!!!

Sometime this summer, two cute, kind of granola-ish guys (do people even use that term anymore?) showed up at the brewery with a bag of mushrooms.  They said (and I *could* be slightly paraphrasing here :) ), “dudes, look at these beautiful mushrooms we just gathered from the woods of NH. Do you want to brew with them?”  Without a moments hesitation we said “heck yea”!

So this summer, I homebrewed a batch of chaga porter, and it came out pretty darn tasty.  It was tasty enough that we decided to brew the beer as our sixth and final brew in our Unafraid of the Dark II stout and porter series.  The beer is called ‘No More Mr. Fungi’ (of course), and it is an easy-to-drink, earthy porter with a great bitterness & depth of flavor due to the mushrooms.

Before describing the beer in more detail, first a bit about chaga. Chaga is a mushroom that grows on birch trees. It is considered a medicinal mushroom in several regions of the world like Eastern Europe. In fact, dating back to the 16th century, chaga has been used in folk medicine as a remedy for cancer, ulcers, and TB.  Even today in Japan, chaga is used to promote healthy looking skin.  Feel free to use this as an excuse as to why you need to pick up a few growlers of this beer!

Jeremy, our chaga forester, brought us the chaga in big chunks, as shown in the picture above.  We then smashed it up into smaller pieces and added it in to the boil.

Here are a few additional details about the beer:

- First, I think it is worth pointing out that if I didn’t tell you there were mushrooms in this beer, you probably couldn’t figure it out.  In that way, this beer is analogous to the Brookford Farm Hidatsa Squash Porter we made last year (for those of you that tried it.)

- The beer came in at 5.9% A.B.V and 33 IBU.  Don’t let the IBUs fool you though, the beer tastes like the IBUs are much higher given the pleasant bitterness that comes from the mushrooms.  In fact, the mushrooms contribute this great earthy, lingering bitterness that make it taste like a robust porter.

- We used 10 lbs of chaga in the boil.

- The beer has a nice tan head and an earthy smell that becomes more prominent as the beer warms up.

Pumpkin Chai Porter 0

Throwback Brewery Pumpkin Chai Porter- Boiled Pumpkin

We can’t wait for you to chai this beer!

The next beer in our Unafraid of the Dark series is a Pumpkin Chai Porter.  Typically, I have our team try the beer before I write it up, in order to get their initial thoughts and to get my creative juices flowing.  They usually come out with a few key phrases or at least 2-3 words that help me get going.  So, I just asked Annette to describe this beer for me, and she said, “delicious”, and then walked out of the room.  Thanks for the inspiration, Annette! :)

Seriously, though, I think Annette summed it up pretty well.  We think this beer is pretty darn tasty, and we hope you do, too!  Here are some more details…

- 80 lbs of pumpkin went into the mash.  We procured these pumpkins from Barker’s Farm in Stratham, NH and Blueberry Bay Farm – also in Stratham, NH.

- We roasted 25 lbs of pumpkin and put that into the fermenter, along with some delicious chai from White Heron Tea. At the same time, we added 8 lbs of brown sugar.

- We tried to go somewhat easy on the chai.  The chai is very distinct on the nose, and the warming spices are prevalent on the palette. Actually, I think it is a perfect amount – very balanced and very drinkable.

- All the pumpkin used in the beer shows up in two ways.  First, the pumpkin gives the beer a nice, smooth body and mouthfeel.  Second, there is an underlying roastiness to the beer, which I think comes from the pumpkin.

-The beer clocks in at over 6% ABV and 33 IBU

Note – We don’t have a lot of this beer, so it will be available to Unafraid of the Dark II customers first, and then other folks in about 2 weeks time.

Chocolate Mint Stout - Minty Awesome-ness!

Chocolate Mint Stout – Minty Awesome-ness!

We are already up to our fourth beer in the Unafraid of the Dark series, and it is one that we have been looking forward to making for quite some time!  The beer is a delicious chocolate mint stout, and it is modeled after a recipe that Jean (Throwback assistant brewer) used to make on a homebrew scale.

Unlike some of the other beers in the series, which paired quite well with main courses, I think this beer is best served with dessert – especially chocolate!  Or, if you are not feeling too cold, it makes a wonderful milkshake.  No need to add anything else to your blender except this beer and vanilla ice cream! And, of course, the Chocolate Mint Stout is very enjoyable to drink just by itself.

So, what’s this beer like?  Well, it visually pretty, with a nice caramel head.  The nose is great – both minty and chocolatey.  And, it is really easy to drink – almost like a smooth peppermint patty flavor, with some real nice prominent chocolate notes.  Once you take a sip, the chocolate and mint linger.. leaving you with beer breath that anyone will enjoy! :)

The beer was made using local mint – mostly coming from our friends at Meadow’s Mirth Farm, as well as some from local gardens (thank you Katherine!)  We put the mint into the boil, along with a healthy dose of cocoa powder.  Roasted barley and the chocolate malt were added to the grain bill for color and to really help underscore the chocolate & roasty notes in the beer.

All in all, we are pretty excited about this beer!  It is easy to drink at 5.6% A.B.V and 52.5 IBUs.

Portsmouth Beer Week 2013 – Events 2

Portsmouth Beer Week is coming up on February 23rd, and it runs through March 4th. For those of you not familiar with Portsmouth Beer Week, it is a 10-day celebration of beer. The goal of Portsmouth Beer week is to increase Portsmouth’s footprint on the national craft beer map!

At Throwback Brewery, we have several fun events planned throughout the week:

  • Sunday, February 24th- The Maine Brew Bus is stopping at Throwback Brewery! From their event page– “The Maine Brew Bus is spinning its wheels across the border to NH, for Portsmouth Beer Week. Come hop on the bus and learn about 4 of NH smallest Breweries. We will meet at the Portsmouth Garage where you will board the bus and head to Throwback Brewery, Blue Lobster Brewing Co., and Earth Eagle Brewing Co. At each stop you will get a first hand exclusive look into the workings of the breweries, and of course sample some beers.”
    • AM Tour 9:15-1:30 Buy Tickets
    • PM Tour 12:15-4:30 Buy Tickets
  • Tuesday, February 26th- While this isn’t an official Portsmouth Beer Week event, we would be remiss if we didn’t point out that on Tuesday, February 26th at 6:30 pm we will be presenting to the zoning board regarding moving the brewery to Hobbs Farm. While the house and barn at Hobbs Farm are zoned industrial, brewing is classified as light manufacturing, and requires a special exception. We have filed the right paperwork to show that we qualify to meet this exception, and we present our case on the 26th. It would definitely help our cause to show that we have support of North Hampton residents. North Hampton residents — you can help by showing up to support us on the 26th. And / or, you can sign your name on a document we have at the brewery. Your help is much appreciated as we embark on this exciting project!
  • Wednesday, February 27th- To celebrate Portsmouth Beer Week, we brewed a collaboration beer with Tyler and the guys at the Portsmouth Brewery. We had a lot of fun brewing the beer, and we hope you guys have a lot of fun drinking it! The beer is called Holy Mole’, and it is a porter designed with the flavors of mole’ sauce in mind. This beer also uses local ingredients (of course :) ). We will be downstairs at the Portsmouth Brewery (in the Jimmy LaPanza lounge) 6 to 8pm on Wednesday, February 27th to tap this beer and tell you more about it!
  • Thursday, February 28th- We will have tasting hours from 4-7pm. Also, we will be at the Coat of Arms pub for their local firkin takeover from 6-8pm. We will be pouring a new beer- a Double Brown Ale that is lightly smoked. Smuttynose will have their Finestkind IPA dry-hopped with experimental hop 01210. And Moat Mountain will be on cask with something that is also bound to be delicious! Hope to see you then.
  • Friday, March 1st- Tasting hours from 4-7pm.
  • Saturday, March 2nd- Tasting hours from 1-4pm.
  • Sunday, March 3rd- Once again, we are teaming up with local cheese makers and Winnepausake Chocolates for a local cheese, chocolate, and beer pairing.  We had a blast last year at this event, and anticipate the same this year! Learn more and sign up here.  Sorry, we are sold out!

My personal favorite event that we held last year was the local chocolate, local cheese, and Throwback beer pairing at our brewery. We had an amazing time stuffing our faces (gracefully, of course) with mouthwatering Winnipesaukee Chocolates and cheeses from local farms, and, of course, meeting new friends as well! Luckily, our customers also told us that they had a great time. :) As a result, we decided to hold this event again this year – coming up soon on Sunday, March 3rd.

Like last year, the event will occur during Portsmouth Beer Week, which starts on February 23rd and runs through the beginning of March.

For those of you that attended the event last year, you can expect a similar experience, but with a few different cheeses and beers.  For those of you that didn’t attend, here’s the high level of what you can expect:

  • Five samples of our beer (including a few fun ones!), paired with
  • Good-sized chunks (~1-oz each) of cheese from NH creameries, plus
  • Truffles and other chocolate from Winnipesaukee Chocolates, plus
  • A mini beer milkshake of my design, that will pair nicely with the chocolate, and
  • An in-depth tour of the brewery with Annette Lee – our head brewer.

When: Sunday, March 3rd. Two sessions: 1pm – 2:30pm and 4:00 pm – 5:30 pm.
Where: Throwback Brewery – 121 Lafayette Road, #3 North Hampton, NH

valentines day at Throwback Brewery

On this Valentine’s Day, we ask you, “are you feeling sweet or sour”? Regardless of your answer, we have a beer for you!

Special today is a sour version of Dippity Do. Shall we call it Zippity Do? :) We aged this beer for 5 months in our barrel, and it soured quite nicely.  The nose has this great sour almost fruity aroma, and the taste is very drinkable – not too tart!

For today, we also have a few red-hued beers for your drinking pleasure:

Be Still My Beeting Heart Stout 1

We love da beets!

Nothing beats a delicious beet beer, baby!

If you are reading this post and are a regular follower of our comings & goings, you’ve probably already ascertained two things:

1: The next beer in the Unafraid of the Dark II series is, indeed, a stout made with beets!

2: We have not lost our fondness for bad puns, as you can tell by the name of this beer – “Be Still My Beeting Heart Stout”! :)

The inspiration for this beer came from a casual conversation with Josh from Meadow’s Mirth Farm (Stratham, NH), who suggested that his big & beautiful beets would make for an interesting beer.  We agreed, and decided to time the arrival of this romantic, red-hued stout to occur right before and during valentine’s day!

Before jumping in to describe the beer and how we made it, first, a few words on the oft-maligned veggie. We realize that within our customer base, there are a large number of beet-fanatics (ourselves included!)  But, we also know that some of you are more akin to beet-skeptics, or even beet haters.  Perhaps you had beets from a can as a child, and the metallic flavor turned you off (as it should!)?  Maybe you ate a few too many beets one day and freaked out during a trip to the loo ;) ?  Or, perhaps you aren’t too fond of the taste?  Whatever the reason, we hope that our beer gives you a reason to give beets another chance!

Alright, enough beet lobbying – on to the beer!

We started with 30 pounds of beets from Meadow’s Mirth, which we washed, sliced, and then put in hot water to soften a bit.

Once the beets were softened, we put them into the mash.  Our goal was to extract some flavor, color, and sugar from the beets during this step of the brewing process.

The wort extracted from the mash tun was a beautiful red color, but this color all but disappeared during the boil.  So, after the primary fermentation, we decided that we wanted to ‘bring the red back’, which we accomplished by an addition of 10lbs of roasted and pureed beets (also from Meadow’s Mirth.)  The extra beets did the trick!  While the beer is a pretty dark stout, it has this amazing purplish almost maroon color to it.  Before carbonating, Annette also added in some Cocoa Nibs to round out the beer and give it a nice, subtle undercurrent of chocolate.

The result?  A very fun beer that makes a perfect Valentine’s Day / mid-Winter treat!  The tasting details::

- A slightly earthy / chocolate / beet-y nose.

- The beer is very smooth drinking.  Take a sip, and you should pick up both the roastiness from the malt and the earthiness from the beets.  The beet flavor is prominent, and it lingers on the back of the palette.

- The head is this very pretty pink color.  In fact, I challenged Annette to have this beer come out with a red / pink head, and she and the team delivered!

- 5.2% Alcohol by Volume.  44 IBU.

Red Rover Coffee Milk Stout 0

Red Rover Coffee Milk Stout

Red Rover, Red Rover we hope this beer makes you come over!

The next beer up in our Unafraid of the Dark series is a Coffee Milk Stout made with freshly roasted coffee from NH-based Red Rover!

Now, usually when I sit down and write up one of our beers, I try to stay a bit detached – describing more of the characteristics of the beer and less about my opinion on the beer’s taste.  After all, if there is one thing I learned since starting this business, it is that everyone’s palette is a bit different…. What I find sublime, you might think of as just “meh”.

That being said, I am going to break my protocol today and just come out and say that I love this beer! Why?  Oh, let me count the ways..

1. The beer has a great nose – I’d call it somewhat fruity, which likely comes from the British Ale yeast used to ferment the beer.

2. It is super smooth and drinkable.  At 4.9% Alcohol by Volume, you can have a few and not worry about getting silly. :)

3. The coffee is present, but not overpowering. It contributes some great roasty notes that linger on your palette.  As the beer warms up, the coffee becomes more pronounced – both on the palette and in the nose.

4. It’s visually very appealing, with a pretty coffee-colored head and deep dark color.

5. The beer was made with very tasty  local coffee. Actually, picking our coffee vendor was pretty straightforward. We wanted a NH-based roaster that has a similar philosophy to ours where sustainability and freshness are concerned. The nano-sized, NH-based Red Rover was a natural match. Their mission is to “find amazing coffees that are sustainably grown and roast them fresh for you.” Not only is this mission admirable, but their coffee is pretty darn tasty, too! We ended up picking Red Rover’s Guatemalan coffee – Ixil A’achimbal.

Chipotle Porter 0

Local NH Chipotles (Scratch and Sniff)

Now that it is the New Year, it is time to kick off the Unafraid of the Dark II series!

First beer up – Chipotle Porter.

This is a beer that Annette and I used to love home brewing years ago, and we are very excited to finally have brewed it on a larger scale!  Those of you familiar with our mission shouldn’t be surprised to hear the the porter is brewed with local chipotles. We made the chipotles by smoking and then drying some plump and gorgeous jalapenos from New Roots Farm.

This beer has a very nice chipotle aroma with some warming heat as you drink it.  Yes, it does have some spice, but the beer is quite drinkable. The stats:
  • 6.4% Alcohol By Volume
  • 36 IBU
Note- For Unafraid of the Dark card holders, the Chipotle Porter will be available for growler fills starting today, Wednesday, January 9th (4 to 6pm.). Not a card holder?  No worries, the beer will be available for regular growler hours starting tomorrow, Thursday, January 10th (4-7pm).
